Funny story! The Man, The Myth and The Joe is actually a woman named Ashlyn and her husband Matt.
We are so sorry to disappoint you. However, Joe is based off a very near and dear family member- Joe Luchini (Matt’s Dad)!
This all started one day as a joke because Ashlyn thought Joe on the go was the funniest coffee name she has ever heard. 3 hours later the best drawing she has done in her 25 years of life was created…and Joe On The Go was born. Matt and Ashlyn created this with a shared passion for the restaurant industry, after working together at 3 different restaurants- and yes that is how they met and fell in love- they have officially started their own adventure in the world of restaurants and cafes.
Joe On The Go is a mobile Coffee and Bar cart intended to be a traveling company. Matt comes from southern Florida and Ashlyn comes from Denver, Colorado. With their shared love of Colorado Summers and Florida winters the hope is to have Joe on The Go constantly on the go!
This means Joe On The Go will be constantly sharing their newest locations via social media to keep up with their love for traveling and summer weather! We hope to meet you all!
